Sarah Thorp, from Alde Valley Academy was crowned the winner of the first ever Great Vertas Bake Off with her signature Carrot Cake.
The competition, which took place at Sybil Andrews Academy welcomed eight Vertas contestants from across the business who created their signature bakes against the clock for the winning title.
Sarah Thorp impressed the judges with her fantastic Carrot Cake, check out the winning recipe below and give it a try yourself!
Ingredients:
- 3oz light brown sugar
- 3oz dark brown sugar
- 3 eggs
- 4 floz oil
- 7oz self raising flour
- 1 ½ tsp bicarbonate of soda
- 3 tsp mixed spice
- Zest of an orange and juice7oz grated carrots
- 6oz sultanas
For the topping:
- 400g cream cheese
- 2 tbsp. icing sugar
- a few drops of vanilla
- Cinnamon
Method:Pre-heat the oven to 160
- Whisk eggs and sugar until fluffy
- Beat in the dry ingredients and oil
- Stir in the carrot, sultanas and orange zest
- Pour into tin and cook for 30 – 40 minutes
- Mix the orange juice and 1 ½ tbsp of brown sugar and set aside
- When cooked make holes in the top of the cake using a skewer and pour in the orange juice/ sugar mix
- Leave to cool in the tin
- Mix the cream cheese, vanilla and icing sugar together
- Pipe on top and sprinkle with Cinnamon
